Garlic Confit Mashed Potato Wontons with Smoked Gruyere

- 2 heads Garlic cloves (peeled for confit)
- 0.75 cup Extra virgin olive oil (enough to submerge garlic)
- 2 lb Russet potatoes (peeled and cubed)
- 4 oz Smoked Gruyere cheese (shredded)
- 30 Wonton wrappers
- 0.5 cup Sour cream (for dipping sauce)
- 2 tbsp Fresh chives (finely chopped)
- Neutral oil (for frying)
- Salt and black pepper (to taste)

Prepare the garlic confit: Place peeled garlic cloves in a small saucepan and cover completely with olive oil. Simmer over very low heat for about 30-40 minutes until the garlic is soft, buttery, and pale golden. Drain, reserving the oil.

While the garlic is cooking, boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes.

Drain the potatoes and mash them until smooth. Mix in the softened garlic confit cloves (mash them into the potatoes) and a few tablespoons of the garlic-infused oil for creaminess. Season with salt and pepper.

Fold the shredded smoked gruyere cheese into the warm mashed potato mixture so it begins to melt.

Lay out a wonton wrapper. Place a small spoonful (about 1 tablespoon) of the potato-cheese mixture in the center.

Moisten the edges of the wonton wrapper with water, fold into a triangle or your preferred shape, and press firmly to seal, ensuring no air bubbles are trapped inside.

Heat about 1-2 inches of neutral oil in a heavy-bottomed skillet or pot to 350°F (175°C).

Fry the wontons in batches for 2-3 minutes per side until they are golden brown and crispy. Drain on paper towels.
