Ingredients

  • 2 chicken cutlets (breaded and fried until golden)
  • 8 oz feta cheese (one block, for whipping)
  • 1 tbsp lemon juice (for the whipped feta)
  • 1 cup cherry tomatoes (halved or quartered)
  • 1 tbsp olive oil (for the tomato salad)
  • fresh herbs (such as basil or parsley, for the tomato salad)
  • salt (to taste)
  • black pepper (to taste)

Steps

  1. 1

Prepare the chicken cutlets by breading and frying them until they are golden brown and cooked through.

  2. 2

Make the lemony whipped feta by combining the block of feta cheese and lemon juice in a food processor or blender. Process until smooth and creamy.

  3. 3

Prepare the tomato salad by tossing halved cherry tomatoes with olive oil, fresh herbs, salt, and pepper in a small bowl.

  4. 4

To assemble, spread a couple of generous spoonfuls of the whipped feta onto the base of a plate.

  5. 5

Place a warm chicken cutlet directly on top of the whipped feta.

  6. 6

Spoon the fresh tomato salad over the top of the chicken cutlet and serve immediately.

Notes

This recipe is great for meal prep as the components can be stored separately. The author notes it gives a 'summery chicken parm vibe' without the heavy baked cheese and sauce.
