Dried morels are rehydrated, filled with a lightly seasoned shrimp paste, then steamed and finished with a savory soy, oyster, and sesame sauce. The result is a protein-rich appetizer with tender mushrooms and a little texture from the shrimp.

Weights are estimates. Together, the ingredients weigh about 305 g before cooking, which is about 155 g per serving.
Steps
Soak the dried morels in warm water for 15–20 minutes. Rinse them, then gently squeeze out excess water.
Use scissors to cut each morel lengthwise along one side, making an opening for the filling.
Put the shrimp, Shaoxing wine, cornstarch, grated ginger, salt, and white pepper in a food processor. Process for about 15–20 seconds, until the mixture forms a paste that still has some small shrimp pieces.
Transfer the shrimp paste to a plastic storage bag. Snip a small corner off the bag.
Pipe the shrimp paste into each morel. Arrange the stuffed mushrooms on a plate.
Steam the stuffed morels over medium-high heat for 8 minutes.
While the morels steam, combine the soy sauce, oyster sauce, water, and sesame oil in a small bowl.
Pour the sauce over the steamed stuffed morels and garnish with the chopped scallion. Serve.
