Shrimp Wonton "Noodle" Soup

- 4 oz shrimp paste (homemade or store-bought)
- 9 wonton wrappers (8-10 wrappers)
- 1 cup leafy greens (choice of greens like bok choy or spinach)
- 5 g Chinese dried seaweed (zi cai / ็ดซ่)
- 1 tbsp scallion (chopped)
- 1 tbsp cilantro (chopped)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- salt (to taste)
- 0.125 tsp ground white pepper

Dip a wonton wrapper in water to moisten it slightly.

Pipe a line of shrimp paste onto the center of the wrapper.

Fold the wrapper over the paste and seal it tightly to create a long, thin filled strip.

Carefully stretch the filled wrapper out to elongate it into a noodle shape. Repeat with the remaining wrappers and paste.

Bring a pot of water to a boil and carefully drop the shrimp wonton "noodles" into the water.

Once the wonton noodles are floating, add your leafy greens of choice to the pot to blanch.

In a serving bowl, combine the dried seaweed, chopped scallions, chopped cilantro, soy sauce, sesame oil, salt, and ground white pepper.

Add a few scoops of the boiling cooking water (broth) into the serving bowl to create the soup base.

Transfer the cooked wonton noodles and greens into the bowl. Garnish with additional cilantro if desired and serve immediately.
Notes
