Ingredients

  • 2 tbs extra virgin olive oil (divided)
  • 500 g potato gnocchi
  • 500 g beef mince
  • 1.5 cups frozen carrots, peas & corn (Woolworths Australian brand)
  • 0.25 cup traditional gravy mix (Woolworths brand)
  • 1.33 cups hot water
  • 2 tbs Worcestershire sauce (Woolworths brand)
  • 0.33 cup tomato paste
  • 0.66 cup mozzarella, cheddar & parmesan shredded blend (Woolworths brand)
  • 0.25 bunch continental parsley (leaves picked and chopped)

Steps

    Heat 1 tbs oil in a 24cm (top) 2L (8-cup) ovenproof frying pan over medium-high heat.

    Add gnocchi and cook, stirring occasionally, for 5 minutes or until golden brown. Transfer to a plate.

    Add remaining 1 tbs oil to the pan.

    Add beef mince and cook, stirring to break up any lumps, for 5 minutes or until browned.

    Add frozen vegetables and cook, stirring occasionally, for 2 minutes or until heated through.

    Sprinkle gravy mix over the mince mixture.

    Add 1 1/3 cups hot water, Worcestershire sauce and tomato paste. Stir to combine.

    Bring the mixture to a boil, stirring, for 2 minutes or until the mixture thickens.

    Preheat an oven grill to high.

    Spoon the browned gnocchi over the beef mixture. Stir to just combine.

    Top with the shredded cheese blend.

    Grill for 3-4 minutes or until the cheese is melted and golden brown.

    Serve sprinkled with fresh chopped parsley.

Notes

Ensure your frying pan is ovenproof before placing it under the grill. If you don't have an ovenproof pan, transfer the beef mixture to a baking dish before topping with gnocchi and cheese.
