Ingredients
- 3 graham crackers (broken into squares)
- 0.5 cup chocolate chips (semi-sweet or milk chocolate)
- 6 large marshmallows (halved)
- 0.5 cup unsalted butter (softened)
- 0.5 cup brown sugar (packed)
- 0.25 cup granulated sugar
- 1 egg (large)
- 1 tsp vanilla extract
- 1.25 cup all-purpose flour
- 0.5 tsp baking soda
- 0.25 tsp salt

In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form the cookie dough.

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Place graham cracker squares onto the prepared baking sheet, spacing them at least 2 inches apart.

Place a small pile of chocolate chips onto the center of each graham cracker square.

Place a marshmallow half (cut side down) on top of the chocolate chips.

Take a scoop of cookie dough and flatten it slightly into a disc, then place it over the marshmallow, pressing the edges down to partially cover the sides of the marshmallow and chocolate.

Notes
Chilling the cookies for the full 20 minutes is the most important step to ensure the dough doesn't melt off the graham cracker base. For a cleaner look, use a large cookie scoop to portion the dough.
