Ingredients

  • 9 Chicken drumsticks (8-10 sections, skin removed)
  • 2 tbsp Garlic paste (for the marinade)
  • 8 oz Tomato sauce (standard canned sauce)
  • 2 Potatoes (peeled and cubed)
  • 2 Carrots (sliced into rounds)
  • 2 cup Chicken broth (or water)
  • 1 packet Sazon seasoning (with Culantro and Achiote)
  • Adobo seasoning (to taste)

Steps

    Prepare the chicken by removing the skin from 8-10 drumstick sections.

    In a large bowl, combine the chicken with 2 tablespoons of garlic paste and any additional dry seasonings like Adobo. Toss well to ensure the chicken is evenly coated.

    In a large pot or caldero over medium-high heat, sear the chicken drumsticks until they are browned on all sides.

    Add the tomato sauce, sazon packet, and enough chicken broth or water to partially submerge the chicken.

    Stir in the cubed potatoes and sliced carrots.

    Bring the liquid to a boil, then reduce the heat to low. Cover the pot and simmer for 35-45 minutes.

    Continue cooking until the potatoes are fork-tender and the chicken is falling off the bone and the sauce has thickened slightly.

Notes

Traditionally served over white rice. You can substitute chicken thighs for drumsticks if preferred. The sauce should be robust and savory, typical of Puerto Rican comfort food.
