Ingredients
- 4 baking potatoes (large, washed and cut into fries)
- 3 tbsp olive oil
- 1 tbsp salt (for potatoes)
- 1 tbsp pepper (for potatoes)
- 2 tsp garlic powder (for potatoes)
- 0.5 lb bacon
- 1 yellow onion (chopped)
- 1 tsp salt (for onions)
- 8 oz white mushrooms (sliced)
- 0.25 cup sour cream
- 4 green onions (chopped)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 1 cup cheddar cheese (shredded)
- 0.5 cup parmesan cheese (shredded)
- 1 tbsp garlic powder (for cheese sauce)
Steps
- 1
Cut your washed potatoes into your desired fries size and soak in cold water for 30 minutes.
- 2
Remove the potatoes from the water and thoroughly dry them.
- 3
Preheat the cooking hearth or oven to 375°F (190°C).
- 4
Toss the potatoes with the oil, salt, and pepper and spread them on a single layer on a baking sheet or large (warmed) cast iron skillet.
- 5
Bake for 20 minutes, then raise the heat to 425°F (220°C) and cook for another 20 minutes, or until they are golden brown.
- 6
While the fries are baking for the final 20 minutes, fry your bacon and let them sit on a paper towel when done.
- 7
Fry your onions in the bacon grease, tossing in the salt. Remove into a separate bowl.
- 8
Fry your mushrooms in the remaining grease.
- 9
In a saucepan over a medium heat cooking fire or stove, melt the butter and then whisk in the flour and garlic slowly.
- 10
Slowly add the milk and continue to stir until the mixture thickens in about 5 minutes.
- 11
Remove the butter mixture from the fire and stir in your salt, pepper, and cheeses until they completely melt.
- 12
When the fries are done, layer the cheese, onions, mushrooms, crumbled bacon, green onions, and sour cream onto the dish.
- 13
Serve to the hungriest of adventurers for a filling meal!
