Weights are estimates. Together, the ingredients weigh about 2.25 kg before cooking, which is about 565 g per serving.
Steps
In a large bowl, combine the chicken thighs with olive oil, minced garlic, honey, 3 tablespoons of lime juice, chili powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Marinate for 10–15 minutes.
Heat a large skillet over medium-high heat. Brown the chicken thighs for 2–3 minutes per side until golden, then remove the chicken from the pan and set aside.
In the same pan, add the basmati rice, chicken broth, and frozen mixed vegetables. Stir to combine and bring the mixture to a simmer.
Place the browned chicken thighs back on top of the rice and vegetable mixture.
Cover the skillet with a tight-fitting lid and reduce the heat to low. Cook for 18–20 minutes until the rice is tender and the liquid is absorbed.
While the chicken and rice cook, whisk together the mayonnaise, sour cream, 1 tablespoon of lime juice, 1/2 teaspoon of honey, garlic powder, and 1/4 teaspoon of salt in a small bowl to create the creamy lime drizzle.
Once cooked, remove the lid and fluff the rice with a fork. Garnish with chopped cilantro if desired.
Drizzle the creamy lime sauce over the chicken and rice and serve immediately.
Notes
This is a great 'lazy dinner' because everything cooks in one pan. For best results, ensure the skillet lid is tight-fitting to properly steam the rice.
