Ingredients

  • 1.5 cup warm water (approx. 110°F/45°C)
  • 2.25 tsp active dry yeast (one standard packet)
  • 1 tbsp honey (or sugar to activate yeast)
  • 3.25 cup all-purpose flour (plus extra for dusting)
  • 1.5 tsp salt

    In a large bowl, combine the warm water, honey, and yeast. Stir gently and let sit for about 5-10 minutes until the mixture becomes foamy.

    Add the flour and salt to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms and no dry flour remains.

    Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm, draft-free spot for about 2 to 3 hours, or until doubled in size.

    Preheat your oven to 450°F (230°C). If using a Dutch oven, place it inside the oven while it preheats.

    Turn the dough out onto a lightly floured surface. Gently shape it into a round loaf, being careful not to deflate all the air bubbles.

    Carefully place the dough onto a piece of parchment paper, then transfer it into the preheated Dutch oven (or onto a baking sheet).

    Score the top of the loaf with a sharp knife or razor blade.

    Bake with the lid on for 20 minutes, then remove the lid and bake for another 10-15 minutes until the crust is deep golden brown and the bread sounds hollow when tapped.

Notes

For the best crust, use a Dutch oven. If you don't have one, you can place a pan of water on the bottom rack of the oven to create steam. Ensure your water isn't too hot, or it will kill the yeast.
