Ingredients
- 2 lb boneless skinless chicken thighs (raw)
- 8 Ole Xtreme Wellness wraps (60 calorie version)
- 2 cup jasmine rice (cooked)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 1 small yellow onion (diced)
- 1 tbsp olive oil
- 2 tsp paprika (for seasoning)
- 1 tsp garlic powder (for seasoning)
- 1 tsp onion powder (for seasoning)
- 1 tsp salt (for seasoning)
- 0.5 tsp black pepper (for seasoning)
- 0.5 tsp oregano (for seasoning)
- 0.5 tsp cayenne pepper (for seasoning)
- 0.5 tsp thyme (for seasoning)
- 0.75 cup nonfat Greek yogurt (for sauce)
- 2 tbsp light mayo (for sauce)
- 1 tbsp hot sauce (for sauce)
- 0.5 lemon juice (juice of 1/2 lemon for sauce)
- 1 tsp Cajun seasoning (for sauce)
- 1 tsp garlic powder (for sauce)
- water (splash to thin sauce)

Prepare the Cajun seasoning by combining 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp oregano, 1/2 tsp cayenne, and 1/2 tsp thyme in a small bowl.

Cut the raw boneless skinless chicken thighs into bite-sized pieces and season them thoroughly with the prepared Cajun seasoning blend.

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the pan and set aside.

In the same skillet, add the diced red bell pepper, green bell pepper, and yellow onion. Sauté until the vegetables are softened and slightly charred, about 5 minutes.

Prepare the Creamy Cajun Sauce by whisking together 3/4 cup nonfat Greek yogurt, 2 tbsp light mayo, 1 tbsp hot sauce, juice of 1/2 lemon, 1 tsp Cajun seasoning, and 1 tsp garlic powder. Add a splash of water if needed to reach a drizzling consistency.

To assemble the burritos, lay out 8 Ole Xtreme Wellness wraps. Divide the 2 cups of cooked jasmine rice evenly among the wraps.

Top the rice with the cooked chicken and the sautéed pepper and onion mixture.

Drizzle the Creamy Cajun Sauce over the filling. You can optionally add cheese at this stage for extra flavor.

Fold in the sides of each wrap and roll tightly to form a burrito. If meal prepping, wrap individually in foil or parchment paper and store in the refrigerator.
Notes
Optional: Add cheese for extra flavor. For meal prep, ensure the jasmine rice is fully cooked before assembly. 2 cups of cooked rice is approximately 2/3 to 3/4 cup of dry rice.
