Plantain and Cheese Waffles

Ingredients
- 1 plantain (washed and with the peel for the microwave)
- 3 tbsp shredded cheese (for the dough; mozzarella or costeño type)
- additional cheese (for filling to taste)
- cooking spray (to grease the waffle maker)

Wash the plantain well and place it whole in the microwave for five minutes until soft.

Carefully remove the peel and mash the plantain pulp with a fork in a bowl until you get a puree.

Add the three tablespoons of shredded cheese to the plantain puree and mix well until fully combined.

Divide the resulting dough into two equal portions (each portion will be for one waffle).

Preheat the waffle maker and lightly grease it with cooking spray to prevent sticking.

Place half of one of the portions in the center of the waffle maker.

Fill with a little more cheese to taste in the center.

Cover the cheese with the other half of the dough portion, sealing the filling.

Close the waffle maker and cook for five minutes or until the waffle is golden brown and firm.

Repeat the process with the second portion of dough.
Notes
