Ingredients
- 1 onions (for caramelizing)
- 1 tbsp sugar (for caramelizing)
- 15 g butter (for the sauce)
- 150 ml heavy cream
- 50 g Parmesan (grated)
- salt (to taste)
- pepper (to taste)
- paprika (to taste)
- Herbes de Provence (to taste)
- 250 g ground beef (for two patties)
- 2 tranches cheddar (good quality)
- 1 burger buns (preferably homemade)
- fried onions (for topping)
Steps
- 1
Start by caramelizing the sliced onions with the sugar in a skillet.
- 2
Once caramelized, remove the onions from the skillet without cleaning it, preserving the flavorful browned bits.
- 3
In the same skillet, add the butter, then pour in the heavy cream.
- 4
Add the grated Parmesan, salt, pepper, paprika, and Herbes de Provence. Mix well until you obtain a smooth sauce.
- 5
Form two balls of ground beef. Place them in a hot skillet and smash them firmly.
- 6
Season with salt and pepper, flip the patties, and place a slice of cheddar on each cooked side.
- 7
Toast the burger buns.
- 8
Spread a generous amount of Parmesan sauce on each cut side of the buns.
- 9
Assemble the burger by adding the two cheddar-topped patties and the caramelized onions.
- 10
Cut the burger in half. Generously pour the remaining hot sauce over the burger halves to "drown" them.
- 11
Finish by sprinkling with fried onions and a little extra Parmesan.
Notes
The author suggests serving this burger with homemade fries. The sauce should be poured generously for maximum visual appeal and indulgence.
