Garlic and Cheese Shrimp Rolls

Ingredients
- 1 lb shrimp (peeled and deveined)
- 6 flour tortillas (or thin wraps)
- 2 tbsp butter
- 4 garlic (cloves finely minced)
- 1 cup mozzarella cheese (shredded)
- 1 cup Monterey Jack cheese (shredded)
- 4 oz cream cheese (softened)
- 0.5 cup parmesan cheese (grated)
- 1 tsp Old Bay seasoning
- 0.5 tsp paprika
- 0.5 tsp black pepper
- 0.5 tsp salt
- 1 tbsp parsley (chopped)
- 1 tbsp olive oil

In a skillet over medium heat, melt the butter and add the minced garlic.

Sauté the shrimp in the garlic butter until they turn pink and juicy. Remove from heat.

In a medium bowl, mix the softened cream cheese, mozzarella cheese, Monterey Jack, parmesan, chopped parsley, Old Bay seasoning, paprika, salt, and pepper until smooth and well combined.

Preheat the oven to 375°F (190°C).

Place a portion of the cheese mixture and the cooked shrimp onto each flour tortilla.

Roll the tortillas tightly and place them seam-side down on a baking sheet.

Brush the tops of the rolls with olive oil and sprinkle with a bit of extra cheese if desired.

Bake for 15 to 18 minutes until the cheese is bubbly and the tortillas are golden brown and crispy.

Garnish with additional fresh parsley and serve hot.
Notes
For crispier results, ensure the oven is fully preheated. You can use whole wheat or gluten-free tortilla wraps if preferred.
