Ingredients

  • 150 ml milk (Cashew milk was used.)
  • 1 egg (Large)
  • 1 tbsp oil or melted butter (Source gives oil or melted butter as alternatives.)
  • 58 g plain white flour
  • 1 tbsp sugar
  • 0.125 tsp salt
  • 1 tbsp butter (For the mushroom filling.)
  • 300 g chestnut mushrooms (Slice before cooking.)
  • 0.125 tsp salt (Listed with pepper for the filling.)
  • black pepper (To taste; amount not specified.)
  • 1 clove garlic (Chopped.)
  • 2 large handfuls spinach
  • 2 heaped tbsp cream cheese
  • 60 g double cream
  • 2 big handfuls mozzarella and cheddar mix (Some is used in the filling and more is added on top; amount unspecified.)
  • butter (A small amount for cooking the crepes; amount not specified.)

Steps

  1. 1

Whisk the milk, egg, and oil (or melted butter) together in a jug.

  2. 2

In a large bowl, mix the flour, sugar, and salt.

  3. 3

Pour 1 cup of the liquid into the flour mixture and whisk until a paste forms. Add the remaining liquid and whisk until smooth, taking care not to over-whisk. Set the batter aside while you prepare the mushroom filling.

  4. 4

Heat the filling butter in a frying pan over medium-high heat.

  5. 5

Add the sliced mushrooms, the filling salt, and pepper to the pan.

  6. 6

Once the mushrooms begin releasing their juices, add the chopped garlic. Cook for about 5 minutes, stirring occasionally, until the mushrooms are lightly caramelized and their liquid has evaporated.

  7. 7

Add the spinach and mix it in until wilted.

  8. 8

Add the cream cheese and double cream. Mix, remove the pan from the heat, and set the filling aside.

  9. 9

Heat a non-stick frying pan over medium-high heat and add a small amount of butter.

  10. 10

Add about 1/3 cup of batter to the pan and swirl to spread it into a thin crepe.

  11. 11

When the edges begin lifting, after about a minute, flip the crepe and cook for another 30 seconds to 1 minute.

  12. 12

Place some mushroom filling in the center of the crepe and fold each side inward to roll it up.

  13. 13

Add more of the mozzarella-cheddar mix on top, then grill until the cheese is melted and golden.

  14. 14

    Serve.
