These slow cooker cowboy butter steak bites come out incredibly tender and tasty. They are slow cooked in a rich, buttery sauce packed with garlic, fresh herbs, Dijon, and a hint of smoky spice.

Ingredients

  • 1 cup onion (medium, sliced)
  • 3 lb boneless beef chuck roast (trimmed and cut into 1- to 1 1/2-inch cubes)
  • 1.5 tsp kosher salt
  • 0.5 cup salted butter (softened)
  • 4 garlic (medium cloves, minced)
  • 1 tbsp fresh flat-leaf parsley (chopped, plus more for garnish)
  • 1 tbsp fresh chives (chopped, plus more for garnish)
  • 2 tsp Dijon mustard
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • 1 tsp smoked paprika
  • 0.5 tsp ground black pepper
  • 0.5 tsp fresh thyme (chopped)
  • 0.25 tsp chili powder
  • 0.25 tsp crushed red pepper
  • 0.5 cup beef broth

Steps

    Place sliced onion in the bottom of a 6- to 7-quart slow cooker.

    Top the onions with the beef chuck roast cubes.

    Sprinkle the beef with kosher salt.

    In a small bowl, prepare the cowboy butter by stirring together the softened butter, minced garlic, parsley, chives, Dijon mustard, lemon zest, lemon juice, smoked paprika, black pepper, thyme, chili powder, and crushed red pepper until well combined.

    Dollop half of the prepared cowboy butter over the steak cubes in the slow cooker.

    Pour the beef broth around the edges of the slow cooker, taking care not to wash the butter off the meat.

    Cover the remaining cowboy butter and place it in the refrigerator to chill.

    Cover the slow cooker and cook on Low heat until the meat is tender, approximately 6 hours.

    Using a slotted spoon, transfer the steak and onions to a serving dish.

    Spoon some of the cooking liquid over the top if desired, then top with dollops of the chilled remaining cowboy butter and garnish with additional fresh parsley and chives.
