Ingredients
- 180 g cooked and shredded chicken (Previously boiled and shredded; approximately 1 chicken breast.)
- 120 g shredded mozzarella cheese
- 80 g cream cheese
- 2 tbsp fresh cilantro (Finely chopped.)
- 2 green onions (Stems, finely chopped.)
- 0.5 tsp salt
- 0.25 tsp garlic powder
- 0.25 tsp paprika
- ground black pepper (1 pinch.)
- 6 flour tortillas (Large; more roll-ups can be made if using small tortillas.)
- 1 egg (For brushing.)
- 1 tbsp milk (To mix with the egg and brush on the roll-ups.)
- 65 g shredded mozzarella cheese (For topping the roll-ups before baking.)
- 1 cup mayonnaise (For the sauce.)
- 3 tbsp fresh cilantro (Finely chopped; for the sauce.)
- 3 garlic (Crushed cloves; for the sauce.)
- salt (1 pinch, for the sauce.)
- ground black pepper (1 pinch, for the sauce.)
Steps
- 1
Preheat the oven to 180 °C (356 °F). Prepare a baking sheet; you can line it with parchment paper or lightly grease it.
- 2
Place the cooked and shredded chicken, 120 g of mozzarella, and the cream cheese in a bowl.
- 3
Add the chopped cilantro and chopped green onions to the bowl.
- 4
Add the salt, garlic powder, paprika, and a pinch of pepper. Mix thoroughly until the filling is smooth and creamy.
- 5
Place a flour tortilla on the work surface. Put a portion of the filling at one end, keeping it away from the edges.
- 6
Roll the tortilla tightly around the filling to form a roll-up. Secure the seam with a toothpick so it does not open during baking. Repeat with the remaining tortillas and filling to make 6 large roll-ups.
- 7
In a small bowl, beat the egg with the tablespoon of milk until fully combined.
- 8
Place the roll-ups on the baking sheet with the seam side down. Brush the entire surface with the egg and milk mixture so they brown evenly.
- 9
Sprinkle the remaining 65 g of mozzarella over the tops of the roll-ups.
- 10
Bake at 180 °C for approximately 20 minutes, or until the tortillas are golden and the cheese on top has melted and is lightly browned.
- 11
While the roll-ups are baking, prepare the sauce: combine the mayonnaise, chopped cilantro, and crushed garlic in a small bowl.
- 12
Season the sauce with a pinch of salt and a pinch of pepper. Stir until smooth and well combined.
- 13
Remove the roll-ups from the oven, carefully remove the toothpicks, and serve hot with the garlic and cilantro sauce.
Notes
Remove all toothpicks before serving. The author indicates that more roll-ups can be made by using smaller tortillas. The sauce can be prepared in advance and refrigerated until ready to serve.
