Ingredients
- 2 tbsp Butter (For the chicken filling)
- 0.5 cup Yellow onion (Finely chopped)
- 1 tbsp Fresh garlic (Minced)
- 2 cup Rotisserie chicken (Shredded)
- Salt (To taste)
- 1 tsp Garlic powder
- 0.5 tsp Black pepper (Ground)
- 1 tsp Paprika (Powder)
- 1 tsp Red chili flakes
- 0.25 cup Unsweetened heavy whipping cream (Add more a teaspoon at a time if the filling is too thick)
- 5 tbsp Cream cheese
- 0.25 cup Green onion (Chopped)
- 0.25 cup Parmesan cheese (Freshly grated)
- 1 tbsp Parsley (Chopped)
- 6 Bread (Slices; of choice)
- 1.5 cup Mozzarella cheese (Shredded)
- Butter (For toasting)
Steps
- 1
Melt the measured butter in a skillet over medium heat.
- 2
Add the chopped onion and cook for 4–5 minutes, until soft and lightly golden.
- 3
Add the minced garlic and cook for 30 seconds.
- 4
Add the shredded rotisserie chicken, garlic powder, black pepper, paprika, and red chili flakes. Stir well and cook for 2 minutes so the seasonings coat the chicken.
- 5
Lower the heat. Add the cream cheese and measured heavy cream, stirring until smooth and combined.
- 6
Fold in the grated Parmesan. If the filling is too thick, add more heavy cream a teaspoon at a time.
- 7
Stir in the chopped green onion and parsley. Taste the filling before adding salt to taste; it should be creamy and thick, not runny.
- 8
Butter the outside of each bread slice. On the inside, layer mozzarella, a generous amount of creamy chicken filling, and more mozzarella, then top with a second slice of bread. Divide the filling and cheese evenly among three sandwiches.
- 9
Cook the sandwiches over medium-low heat for about 3–4 minutes per side, until the bread is deeply golden and crisp and the cheese has melted.
- 10
Cover the pan briefly if needed to help the centers melt, then uncover to keep the crust crisp.
- 11
Let each sandwich rest for about a minute before slicing and serving.
Notes
The amount of additional heavy cream used to thin the filling and the butter for toasting are not specified. The source gives no exact time for briefly covering the pan.
