Ingredients

  • 1.5 cup Raw walnuts (Divided; soak 3/4 cup for the filling and reserve the remaining walnuts for the topping.)
  • 1 cup Maple syrup
  • 0.75 cup Brown coconut sugar
  • 0.25 cup Tapioca starch
  • 0.6667 cup Vegan butter
  • 1 tsp Ground cinnamon
  • 1 tsp Vanilla extract
  • 2 tbsp Unsulphured molasses
  • 1 Vegan 9-inch pie crust (Thaw to room temperature first if using a frozen crust.)
  • Melted chocolate (For drizzling; amount not specified.)
  • Vegan vanilla ice cream (For serving; amount not specified.)

Steps

  1. 1

Soak 3/4 cup of the walnuts in hot water for at least 2 hours, or overnight in the refrigerator. Drain them thoroughly before using.

  2. 2

If using a frozen pie crust, set it out and allow it to thaw to room temperature.

  3. 3

Preheat the oven to 375°F (190°C).

  4. 4

Place the pie crust in the oven and bake at 375°F (190°C) for 10–12 minutes, until lightly set. Remove it from the oven and let it cool briefly.

  5. 5

Reduce the oven temperature to 360°F (182°C).

  6. 6

While the crust bakes, add the maple syrup, brown coconut sugar, tapioca starch, vegan butter, cinnamon, vanilla extract, molasses, and the drained soaked walnuts to a food processor.

  7. 7

Blend the mixture until the filling is very smooth, scraping down the sides of the processor as needed.

  8. 8

Pour the smooth walnut filling into the cooled pie crust and spread it evenly.

  9. 9

Arrange the remaining walnuts over the top of the pie. You may have some walnuts left over depending on how densely you arrange them.

  10. 10

Bake the filled pie at 360°F (182°C) for 20–25 minutes, until the edges of the crust are golden brown and the filling is set.

  11. 11

Drizzle melted chocolate over the baked pie.

  12. 12

Allow the pie to cool to room temperature before serving. Serve it on its own or with vegan vanilla ice cream.
