Ingredients

  • 100 g frozen strawberries (frozen strawberries)
  • 75 g ice cubes (ice cubes)
  • 50 ml skim milk (skim milk; any milk variant works)
  • 12 g protein powder (protein powder; note that vegan protein powder works significantly less well for fluffing)
  • 10 g sugar substitute (sugar substitute)
  • 0.25 tsp xanthan gum (optional; for even more fluff effect)

Steps

    Place the 100g frozen strawberries and 75g ice cubes into a food processor.

    Mix until the mixture becomes a 'frozen crumb' consistency.

    Add 50ml of milk to the food processor.

    Mix again until the milk is fully incorporated into the ice crumbs.

    Add 12g protein powder, 10g sugar substitute, and optionally 0.25 tsp xanthan gum to the processor.

    Let the machine mix for 3 to 5 minutes. The longer you mix, the fluffier the texture will become.

    While mixing, occasionally use a spatula to scrape down the sides of the bowl to ensure everything is evenly incorporated.

    Scoop the mixture into a large bowl and serve immediately.

Notes

Tip: Garnish with fresh strawberries, grated chocolate, or a crumbled cookie. Note that vegan protein powder does not fluff as well as whey or casein. The xanthan gum is highly recommended for the best texture.
