- 3 tbsp Unsalted butter (cold, cubed, for crumb topping)

In a medium bowl, combine the softened cream cheese, 1/4 cup sugar, and 1 teaspoon vanilla extract. Whisk or beat until smooth and creamy. Set aside.

In a separate small bowl, prepare the crumb topping by mixing 1/2 cup flour and 1/4 cup brown sugar. Cut in 3 tablespoons of cold cubed butter with a fork or pastry cutter until the mixture resembles coarse crumbs. Set aside.

In a large bowl, whisk together the dry ingredients for the batter: 2.5 cups all-purpose flour, baking powder, and salt.

In another bowl, whisk together the melted butter, 1 cup granulated sugar, eggs, sour cream, peach puree, and milk until well combined.

Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix. If you prefer chunks of fruit, you may fold in fresh diced peaches at this stage.
