Ingredients
- 2 lb Chicken thighs (Amount estimated from the video; boneless or bone-in may be used, though boneless thighs are easiest to shred.)
- 1 bottle Teriyaki sauce (About 12 oz (340 g); the creator used Kikkoman Teriyaki Barbecue Sauce with Garlic and Green Onions.)
- 1 bag Frozen stir-fry vegetables (About 16 oz (454 g). Add frozen.)
- 3 bags Ramen noodles (Use the noodle blocks only; discard or reserve the seasoning packets. Estimated total noodle weight is about 9 oz (255 g).)
- Sesame seeds (For topping, to taste.)
- Green onions (Optional topping, sliced.)
Steps
- 1
Place the chicken thighs in a slow cooker. Arrange them in an even layer so they cook uniformly.
- 2
Pour the entire bottle of teriyaki sauce over the chicken, making sure the thighs are well coated.
- 3
Cover the slow cooker and cook on LOW for about 5 hours, until the chicken is tender and cooked through. If using a thermometer, the thickest part should reach at least 165°F (74°C).
- 4
Add the frozen stir-fry vegetables directly to the slow cooker. Replace the lid and cook on LOW for 30 minutes, until the vegetables are heated through but still retain some texture.
- 5
Turn off the slow cooker. Using two forks, shred the chicken into bite-size pieces directly in the sauce and vegetables.
- 6
Stir the chicken and vegetables thoroughly so everything is evenly coated with the teriyaki sauce. Cover the slow cooker again to keep the mixture warm while you prepare the noodles.
- 7
Bring a pot of water to a boil. Add the three ramen noodle blocks, leaving out the seasoning packets, and cook for about 3 minutes, or until the noodles are tender.
- 8
Drain the ramen noodles thoroughly. Add the drained noodles to the slow cooker mixture.
- 9
Toss the noodles, shredded chicken, vegetables, and sauce together until evenly combined. Serve immediately, topped with sesame seeds and, if desired, sliced green onions.
Notes
The chicken amount and package sizes were not stated in the source and have been estimated. Discard the ramen seasoning packets. Keep leftovers refrigerated in an airtight container for up to 3 days; reheat gently with a splash of water if the noodles have absorbed the sauce.
