- 2.25 tsp active dry yeast (1 standard packet)
- 0.5 cup granulated sugar (divided)
- 0.5 cup unsalted butter (melted and slightly cooled)
- 1 egg (large, room temperature)
- 1 egg yolk (large, room temperature)
- 4.25 cup all-purpose flour (plus more for dusting)
- 1 tsp salt
- 1 cup brown sugar (packed)
- 2.5 tbsp ground cinnamon
- 6 tbsp unsalted butter (very soft)
- 4 oz cream cheese (softened)
- 0.25 cup unsalted butter (softened)
- 1.5 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream (plus more as needed for consistency)

In the bowl of a stand mixer, combine the warm milk, 1 tablespoon of the granulated sugar, and the active dry yeast. Stir gently and let it sit for about 5-10 minutes until the mixture becomes foamy.

Add the remaining granulated sugar, melted butter, egg, and egg yolk to the yeast mixture. Whisk until well combined.

Attach the dough hook to the mixer. Add the flour and salt. Mix on low speed until a dough starts to form.

Increase the speed to medium and knead the dough for 5-7 minutes. The dough should be soft and slightly tacky but should pull away from the sides of the bowl.

Transfer the dough to a large, lightly greased bowl. Cover with plastic wrap or a clean kitchen towel and let it rise in a warm, draft-free spot for 1 to 1.5 hours, or until doubled in size.
