Ingredients
- 2 Eggs
- 0.5 cup All-purpose flour (Plus more if needed to make a thick batter)
- 0.25 cup Unsweetened cocoa powder (For the batter)
- 0.25 cup Sugar (Use any preferred sugar)
- 0.5 tsp Baking powder
- 0.25 cup Milk (Use any preferred milk)
- 2 tbsp Chocolate (Roughly chopped into shards)
- 3 tbsp Melted butter or peanut butter (Choose one; nutrition is estimated using peanut butter)
- Salt (A pinch, for the batter)
- 0.25 cup Brown sugar or coconut sugar (For the topping)
- 2 tbsp Unsweetened cocoa powder (For the topping)
- Salt (A pinch, for the topping)
- 3 tbsp Boiling water
- Ice cream (To serve)
Steps
- 1
In a small mixing bowl, whisk together the flour, cocoa powder, baking powder, sugar, and the batter’s pinch of salt until evenly combined and no cocoa streaks remain.
- 2
Add the eggs, milk, and melted butter or peanut butter. Mix until a thick, cohesive batter forms; if it is too loose, add a little more flour as needed.
- 3
Add the roughly chopped chocolate shards and stir them through the batter until evenly distributed.
- 4
Spoon the batter into a microwave-safe medium bowl and smooth the surface.
- 5
In a separate small bowl, whisk together the brown or coconut sugar, the topping cocoa powder, and the topping pinch of salt.
- 6
Sprinkle the sugar-cocoa mixture evenly over the cake batter. Do not stir it in.
- 7
Pour the boiling water evenly over the topping. The water will help create the pudding sauce as the cake cooks.
- 8
Microwave on high for 2 to 4 minutes, depending on the thickness of the bowl. Stop when the cake is set on top and the sauce around and beneath it has thickened; avoid overcooking, since microwave cakes dry out quickly.
- 9
Let the cake cool briefly before eating, then serve warm with ice cream.
Notes
Microwave timing varies with bowl shape, depth, and wattage. Use a microwave-safe bowl with room for the cake to rise. The recipe specifically cautions to let it cool briefly before eating because the pudding and bowl will be very hot.
