Ingredients
- 245 g dark chocolate (Chopped or use chips so it melts faster)
- 200 g butter (Cut into small cubes; reserve additional butter for greasing the baking dish)
- 175 g caster sugar (Cane sugar can be pulsed in a blender to create a finer texture)
- 125 g light brown sugar
- 4 large eggs
- 2 tsp vanilla extract
- 115 g all-purpose flour (Sift before adding)

- 100 g dark chocolate chunks or chips (Toss into the brownies 20 minutes after they begin baking)

Preheat the oven to 350°F (175°C). Grease a 12 × 9-inch baking dish with butter and line the bottom with parchment paper.

Place the chopped dark chocolate and cubed butter in a heatproof bowl set over a pan of gently simmering water. Ensure the bottom of the bowl does not touch the water. Stir gently until the chocolate and butter are fully melted and combined.

Remove the bowl from the heat. Whisk in the caster sugar and light brown sugar; this helps cool the chocolate mixture before the eggs are added.

Add the eggs and vanilla extract, then whisk until incorporated and the batter is smooth.

Sift the all-purpose flour and salt into the bowl. Stir just until the flour is combined; do not overmix.

Bake for 35–50 minutes. The brownies are ready when the edges are visibly cracked and set while the center remains soft.
