Ingredients

  • 2 lb minced chicken
  • 10 mini tortillas
  • salt and black pepper (To taste, for seasoning the chicken)
  • oil (For cooking)
  • 1 cup mayonnaise (For the Caesar dressing)
  • 2 tsp Dijon mustard (For the Caesar dressing)
  • salt (To taste, for the Caesar dressing)
  • 3 tbsp olive oil (For the Caesar dressing)
  • 1 tsp Worcestershire sauce (For the Caesar dressing)
  • 2 tsp lemon juice (For the Caesar dressing)
  • garlic (2–3 cloves, freshly minced, for the Caesar dressing)
  • 1 tsp black pepper (For the Caesar dressing)
  • 1 romaine lettuce (Large head, diced, for the Caesar salad topping)
  • 0.333 cup Parmesan cheese (Shredded or shaved, for the Caesar salad topping)
  • 1 cup croutons (For topping the tacos)

Steps

  1. 1

Divide the minced chicken into 10 equal portions.

  2. 2

Place 2–3 tablespoons of ground chicken in the center of each mini tortilla and press it down gently into an even layer.

  3. 3

Season the chicken with salt and black pepper.

  4. 4

Heat a skillet over high heat and add a small amount of oil for cooking.

  5. 5

Place the tortillas in the skillet meat-side down, reduce the heat to medium-low, and cook for 2–3 minutes, or until the chicken is cooked through.

  6. 6

Flip the tacos and cook the tortilla side until it is crispy and golden.

  7. 7

In a bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, freshly minced garlic, salt, and black pepper.

  8. 8

Slowly pour in the olive oil while whisking continuously until the Caesar dressing is smooth and emulsified.

  9. 9

Top each cooked taco with diced romaine lettuce, shaved or shredded Parmesan cheese, and croutons.

  10. 10

Drizzle the Caesar dressing over each taco.

  11. 11

Serve the Chicken Caesar Smash Tacos immediately.

Notes

The source specifies 2–3 tablespoons of chicken per tortilla while also calling for 2 lb of chicken divided into 10 portions; these quantities do not precisely align, so follow the source's stated method and use an even portion on each tortilla. The source does not specify the exact amount of cooking oil or a final internal temperature; cook the chicken through before serving.
