Ingredients
- 3 tbsp whole grain spelt flour (for the biscuit)
- 2 tbsp regular spelt flour (for the biscuit)
- 50 g vanilla whey protein (2 scoops; for the biscuit)
- 3 tbsp xylitol (for the biscuit)
- 1 baking powder (1 packet/standard amount)
- 6 egg whites (for the biscuit)
- lemon or orange zest (optional; for the biscuit)
- 500 g low-fat cottage cheese (for the cream)
- vanilla flavoring (a few drops; for the cream)
- 100 g dark chocolate (at least 52% fat; for the topping)
- 1 tsp coconut oil (for the topping)

Preheat the oven to 160°C (320°F).

In a clean bowl, beat the 6 egg whites until stiff peaks form, gradually adding the 3 tablespoons of xylitol as you whisk.

Sift together the whole grain spelt flour, regular spelt flour, vanilla protein powder, and baking powder. Gently fold this dry mixture and the citrus zest into the beaten egg whites.

Spread the batter onto a baking sheet lined with parchment paper and bake until the biscuit is cooked through and golden.

Remove the biscuit from the oven. While still hot, use a clean kitchen towel to roll the dough from the shorter side into a log shape to help it set. Let it cool in this shape.

Prepare the cream by mixing the low-fat cottage cheese with vanilla flavoring drops. If a firmer consistency is desired, you may add a gelatin thickener according to package instructions.

Unroll the cooled biscuit, spread the cottage cheese cream evenly over the surface, and roll it back up. Cut the log into approximately 6 mini-rolls.

Melt the dark chocolate with the coconut oil using a water bath or microwave in short bursts.

Dip or coat the mini-rolls in the melted chocolate and place them in the refrigerator to set before serving.
