Ingredients

  • 2 cup cherry tomatoes (approximate based on standard one-pan recipe)
  • 8 oz feta cheese (one block)
  • 1 lb salmon (cut into chunks)
  • 8 oz pasta (short pasta like penne or fusilli)
  • 0.25 cup olive oil
  • salt (to taste)
  • black pepper (to taste)

Steps

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

In a large baking dish, place the block of feta cheese in the center and surround it with cherry tomatoes.

  3. 3

Drizzle the tomatoes and feta with olive oil and season with salt and black pepper.

  4. 4

Add the salmon chunks to the baking dish.

  5. 5

Bake in the preheated oven for approximately 25-30 minutes until the tomatoes have burst and the salmon is cooked through.

  6. 6

While the feta and tomatoes bake, cook your pasta in a separate pot of boiling salted water according to package instructions; drain.

  7. 7

Once the baking dish is out of the oven, mash the softened feta and tomatoes together to create a creamy sauce.

  8. 8

Add the cooked pasta to the baking dish and toss everything together until the pasta is well coated in the sauce.

Notes

The creator mentions this is a 'lazy' meal. You can pre-season the salmon with additional spices like garlic powder or red pepper flakes for more flavor.
