Weights are estimates. Together, the ingredients weigh about 730 g before cooking, which is about 185 g per serving.
Steps
Preheat the oven to 200 °C (400 °F) (400 °F (200 °C)) and line a baking sheet with parchment paper or aluminum foil.
Peel the sweet potatoes and cut them into slices approximately 1.25 cm thick.
Place the sweet potato slices in a large bowl. Add the olive oil, maple syrup, cinnamon, salt, and pepper, and toss until evenly coated.
Arrange the slices in a single layer on the prepared baking sheet.
Roast for 35-40 minutes, turning them halfway through cooking, until tender and lightly caramelized around the edges.
Remove the baking sheet from the oven and drizzle the sweet potatoes with a little more maple syrup.
Sprinkle the chopped pecans over the top for a crunchy finish.
Notes
For crispier edges, the baking sheet can be preheated in the oven while the sweet potatoes are being prepared. Add the pecans at the end, as they can burn easily. If you cut the sweet potatoes thicker, increase the cooking time until they are tender. For a nut-free version, omit the pecans or replace them with pumpkin seeds. For a sweeter variation, mini marshmallows can be added during the last 10 minutes of roasting.
