Weights are estimates. Together, the ingredients weigh about 200 g before cooking, which is about 50 g per serving.
Steps
Preheat the air fryer to 310ºF (150 °C).
In a medium bowl, whisk together the almond flour, sweetener, collagen, baking soda, and salt.
Stir in the melted butter, egg yolk, and vanilla extract until well combined.
Stir in the sugar-free chocolate chips.
Gather the dough into a ball and place on a square of parchment paper about 8 inches square.
Pat the dough into a disc about 5 inches in diameter.
Set the air fryer to the Bake setting and place the cookie (on its parchment paper) on the air fryer crisper rack.
Cook at 310ºF (150 °C) for 8 to 10 minutes, until the cookie is puffed and golden brown.
Remove the cookie from the air fryer and let it cool completely before serving.
Notes
If your air fryer does not have a Bake function, try reducing the temperature to 300ºF as the standard air fry setting blows heat more intensely. Watch the cookie closely as different brands vary in intensity. For extra flavor, you can add chopped roasted pecans or a sprinkle of Maldon salt before baking.
