Ingredients

  • 2 tbsp extra virgin olive oil (EVOO)
  • 4 garlic cloves (grated or finely minced)
  • 1 tsp red pepper flakes (adjust to taste for spice level)
  • 1.5 cup dry pasta (short shapes like penne or fusilli work best)
  • 16.9 oz organic chicken bone broth (one standard small carton)
  • 0.33 cup heavy cream
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp butter (unsalted preferred)
  • 0.25 cup parmesan cheese (freshly grated)
  • salt and pepper (to taste)

Steps

    In a large skillet or pot, heat 2 tablespoons of extra virgin olive oil over medium heat.

    Add the grated garlic and red pepper flakes to the oil. Sauté for about 1 minute until the garlic is fragrant and just beginning to turn golden, being careful not to burn it.

    Add the dry pasta directly into the pot. Pour in the 16.9 oz of chicken bone broth. Stir to combine.

    Bring the mixture to a boil, then reduce the heat to a simmer. Cook, stirring occasionally to prevent sticking, until the pasta is al dente and most of the liquid has been absorbed (about 8-10 minutes depending on pasta type).

    Once the pasta is cooked and the liquid has reduced to a thick starch, stir in the heavy cream, butter, and lemon juice. Mix well until the butter is melted and the sauce is glossy.

Notes

If the sauce becomes too thick before the pasta is fully cooked, add a splash more broth or water. For a brighter flavor, garnish with fresh parsley or lemon zest.
