My Style Cheddar Cheese Fries
Delicious French fries loaded with homemade cheddar cheese sauce, seasoned ground beef, crispy bacon, and a fresh touch of sour cream and chives.

Ingredients
- 10 Cheddar cheese (units (slices or strips))
- 350 g Heavy cream (for the cheese sauce)
- 1 Plain yogurt (unsweetened, for the sour cream)
- 1 Lemon juice (juice of 1 lemon)
- Salt (to taste)
- 250 g Ground beef
- Meat seasonings (salt, pepper, garlic powder, and merkén to taste)
- 100 ml Water (mixed with cornstarch)
- 1 tsp Cornstarch (teaspoon)
- 3 Potatoes (large potatoes, cut for frying)
- 100 g Bacon (cut into small squares)
- Chives (chopped for garnish)
- Oil for frying (amount needed for the potatoes)

Cut the bacon into small squares.

Cook the bacon in a skillet over medium heat without adding oil, until it releases its own fat and becomes well browned and crispy. Remove from heat and set aside.

In the same skillet, using the bacon fat, cook the ground beef. Season with salt, pepper, garlic powder, and merkén to taste.

Dissolve the teaspoon of cornstarch in the 100ml of water and add it to the meat. Cook for a couple more minutes until the sauce thickens and gives it a juicy texture. Set aside.

For the sour cream: in a small bowl, mix the plain yogurt with the lemon juice and salt to taste. Mix well and keep refrigerated.

For the cheddar cheese sauce: heat the heavy cream in a small pot over low heat. Add the 10 slices of cheddar cheese and stir constantly until completely melted and you obtain a smooth sauce.

Prepare the French fries in two stages: perform a first fry of the potatoes in oil over medium heat for about 4 minutes. Remove and drain on paper towels.

Perform the second fry by increasing the oil temperature until the potatoes are well browned and crispy.

For the final assembly, place the hot French fries on a large platter or plate.

Drench the fries with the hot cheddar cheese sauce.

Top with the prepared ground beef and crispy bacon.

Finish with a touch of the reserved sour cream and sprinkle chopped chives on top.
Notes
The two-stage frying technique ensures the potatoes stay soft on the inside and very crispy on the outside. You can adjust the heat level by varying the amount of merkén in the meat.
