Instant Pot Haleem
A quick and viral version of the traditional slow-cooked Pakistani meat and grain stew, using an Instant Pot and oats to achieve the signature thick, jammy texture in a fraction of the time.

Ingredients
- 1 cup Oil (Divided for cooking and tarka)
- 700 g Boneless beef (Or any meat of your choice)
- 1 large Onion (Sliced and fried)
- 2 tbsp Ginger garlic paste (Freshly grated preferred)
- 1 Shaan Shahi Haleem Mix (One standard packet)
- 2 tbsp Yoghurt
- 1 cup Instant oats
- 0.5 tsp Turmeric
- Lentils (Soaked; typically the mix included in the Shaan packet or a small handful of mixed dals)
- 6 cup Water (Boiling)
- Tarka ingredients (Onions, ginger, green chillies, and fresh mint leaves)
- Garnish (Chat masala, fried onions, julienned ginger, green chillies, and lemon juice)

Set the Instant Pot to 'Saute' mode and heat the oil.

Add the boneless beef (or meat of choice) to the pot and 'bhunify' (sear/sauté) for about 5 minutes until browned.

Add the freshly grated ginger garlic paste and continue to sauté for a few more minutes until the raw smell disappears.

Add the yoghurt, fried onions, turmeric, Shaan Shahi Haleem mix, instant oats, and soaked lentils to the pot.

Pour in 6 cups of boiling water. Close the Instant Pot lid and set to 'Multigrain' mode for 30 minutes.

Once the timer is up and pressure is released, open the lid. Use an immersion blender to grind the mixture for less than a minute to achieve a smooth, stretchy consistency.

Prepare the tarka (tempering) by heating a small amount of oil in a separate pan and frying sliced onions, ginger, green chillies, and fresh mint leaves until fragrant and golden.

Pour the hot tarka over the haleem.

Serve hot, garnished with a sprinkle of chat masala, more fried onions, julienned ginger, chopped green chillies, and a squeeze of fresh lemon juice.
Notes
Bhunify is a South Asian culinary term meaning to sauté or fry spices and meat thoroughly to develop deep flavor. Using instant oats is a shortcut to provide the thick, gelatinous texture usually achieved by hours of cooking wheat and barley.
