Bring a large pot of well-salted water to a boil. Cook the noodles according to the package directions until tender but still slightly firm. Before draining, reserve about 120 ml of the hot cooking water.

While the noodles cook, add the peanut butter, soy sauce, lime juice, maple syrup, chili garlic sauce, minced garlic, and sesame oil to a bowl. Whisk until smooth and combined.

Add about 60 ml of the reserved hot noodle water to the peanut mixture and whisk until it becomes smooth, pourable, and glossy. Add more water a little at a time if needed.

Drain the noodles and return them to the warm pot or place them in a large bowl. Add the peanut sauce and toss thoroughly until every noodle is evenly coated. Loosen with additional reserved cooking water if the sauce is too thick.
