Ingredients
- 2 lb chicken wings (split into flats and drumettes, patted dry)
- 1 tbsp baking powder (aluminum-free for best results)
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp garlic powder
- 0.33 cup honey
- 0.25 cup sriracha (adjust for desired spice level)
- 2 tbsp soy sauce
- 1 tsp sesame oil
- sesame seeds (for garnish)
- green onions (sliced, for garnish)
Steps
- 1
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper and place a wire cooling rack on top to ensure air circulation.
- 2
Pat the chicken wings completely dry with paper towels. In a large bowl, toss the wings with baking powder, salt, pepper, and garlic powder until evenly coated.
- 3
Arrange the wings on the wire rack in a single layer, ensuring they are not touching. Bake for 40-45 minutes, flipping halfway through, until the skin is golden brown and crispy.
- 4
While the wings bake, whisk together the honey, sriracha, soy sauce, and sesame oil in a small saucepan over low heat. Simmer for 2-3 minutes until slightly thickened, then remove from heat.
- 5
Once the wings are done, transfer them to a large bowl. Pour the sauce over the wings and toss until thoroughly coated.
- 6
Garnish with sesame seeds and sliced green onions before serving immediately.
Notes
For extra crispy wings, ensure they are as dry as possible before adding the seasoning. The baking powder is the secret ingredient that creates a crispy skin without deep frying.
