Ingredients

  • 3 large eggs (lightly beaten)

  • 1 tsp hondashi (Japanese instant dashi granules)
  • 100 g boneless chicken thigh (cut into small bite-size pieces)
  • 2 shiitake mushrooms (thinly sliced; use fresh mushrooms)
  • 0.25 cup peas (fresh or thawed frozen peas)
  • 1 tsp soy sauce (estimated seasoning based on a typical chawanmushi preparation)
  • 1 tsp mirin (estimated seasoning; optional)

Steps

    Prepare a steamer by bringing several centimeters of water to a gentle simmer. Keep the heat low enough that the water produces steady steam without vigorously boiling.

    Dissolve the hondashi in the water. Stir in the soy sauce and mirin, then allow the seasoned stock to cool until it is warm or room temperature rather than hot.

    Beat the eggs gently in a bowl until combined, taking care not to incorporate too much air. Strain the beaten eggs through a fine-mesh sieve into the cooled dashi mixture for an especially smooth custard.

    Divide the chicken pieces, sliced shiitake, and peas between two heatproof cups or small bowls suitable for steaming.

    Pour the egg-and-dashi mixture over the fillings, dividing it evenly. Skim off any bubbles from the surface, then cover each cup loosely with foil or a heatproof lid.

    Place the cups in the steamer. Steam over low heat for about 15–20 minutes, keeping the steam gentle so the custard does not become porous or curdled.

    Check for doneness by gently nudging a cup: the custard should be set around the edges with a slight jiggle in the center, and the chicken should be fully cooked to an internal temperature of 165°F (74°C).

    Remove the cups carefully and let them stand for 1–2 minutes. Serve hot, taking care because the cups and custard will be very hot.
