Ingredients

  • 2 lb boneless skinless chicken fillet (Thinly sliced)
  • 1 tbsp garlic powder (For the chicken marinade)
  • 1 tbsp vinegar (For the marinade)
  • 1 tsp paprika powder (For the marinade)
  • 1.5 tbsp hot sauce (Source gives 1–2 tbsp; adjust to taste)
  • salt (To taste, for the chicken marinade)
  • 1 tbsp black pepper (For the marinade)
  • 1 tsp white pepper (For the marinade)
  • 1 tsp red chili powder (For the marinade)
  • 1 tbsp chicken powder (For the marinade)
  • 0.5 cup all-purpose flour (For coating)
  • 0.333 cup corn flour (For coating)
  • 1 cup breadcrumbs or cornflakes (Use breadcrumbs or crushed cornflakes)
  • 1 egg (For the egg coating)
  • 2 tbsp milk (For the egg mixture)
  • salt (To taste, for the coating mixture)
  • 1 tbsp garlic powder (For the coating mixture)
  • 0.5 cup mayonnaise (For the spicy garlic mayo)
  • 2 tbsp jalapeños (Chopped)
  • 1 tbsp sambal oelek sauce (Alternatively use any chili sauce plus 1/2 tbsp red chili flakes)
  • 1 tbsp fresh garlic (Finely minced)
  • salt (To taste, for the spicy garlic mayo)
  • 1 tbsp black pepper (For the spicy garlic mayo)
  • 1 tbsp lemon juice (For the spicy garlic mayo)
  • oil (For frying, or for spraying the baking sheet and nuggets)

Steps

  1. 1

In a mixing bowl, combine the chicken with the marinade ingredients: salt, black pepper, garlic powder, red chili powder, white pepper, paprika powder, hot sauce, vinegar, and chicken powder. Mix well.

  2. 2

Transfer the seasoned chicken to a ziplock bag. Pound it and distribute it evenly into a thin layer.

  3. 3

Place the sealed bag on a flat dish and freeze for 6 hours, or until the chicken is frozen solid.

  4. 4

Remove the frozen chicken from the ziplock bag and cut it into the desired nugget shapes.

  5. 5

In a bowl, combine the egg and milk. Beat until thoroughly mixed.

  6. 6

In a separate bowl, combine the all-purpose flour, corn flour, salt, and garlic powder. Mix well.

  7. 7

Dip each chicken piece in the egg mixture, then coat it in the flour mixture, dip it again in the egg mixture, and finally coat it with the breadcrumbs or cornflakes.

  8. 8

Arrange the coated nuggets on a sheet or in a ziplock bag and freeze them for later use if desired.

  9. 9

For frying, heat oil over medium-high heat. Fry the nuggets for 5–6 minutes, or until lightly golden brown and fully cooked.

  10. 10

Alternatively, place the nuggets on an oiled baking sheet and spray the nuggets with oil. Bake at 450°F for 10 minutes.

  11. 11

Flip the nuggets, spray with more oil, and bake for an additional 10 minutes, until golden brown and fully cooked.

  12. 12

To make the spicy garlic mayo, combine the mayonnaise, chopped jalapeños, sambal oelek, minced garlic, salt, black pepper, and lemon juice. Mix until combined. If substituting chili sauce, add 1/2 tablespoon red chili flakes as stated in the source.

Notes

The source gives both frying and baking methods. It does not specify an internal temperature; chicken should be fully cooked before serving. The source lists “garlic bowl” in the coating method, which is interpreted as garlic powder based on the coating ingredient list.
