Weights are estimates. Together, the ingredients weigh about 1.34 kg before cooking, which is about 335 g per serving.
Steps
Season the chicken thighs with smoked paprika, garlic powder, salt, and black pepper.
Grill the chicken and fresh corn until the chicken is fully cooked and the corn is lightly charred.
Cut the grilled chicken into small pieces and remove the corn kernels from the cobs.
To prepare the vinaigrette, combine the olive oil, chopped cilantro, jalapeño, garlic, lime juice, red wine vinegar, salt, and pepper in a small bowl or food processor until well combined.
In a large salad bowl, combine the cooked orzo pasta, chopped chicken, corn, chopped red onion, avocado pieces, and fresh cilantro.
Pour the cilantro-jalapeño vinaigrette over the salad and gently toss to coat all the ingredients.
Serve immediately or refrigerate to allow the flavors to meld.
Notes
The vinaigrette has a flavor profile similar to chimichurri, adding a tangy and slightly spicy touch. It is ideal for preparing in advance (meal prep).
