Ingredients
- 1 kg fresh apricots (washed, halved, and pits removed)
- 50 g granulated sugar (for the apricots)
- 0.5 tsp fresh ginger (grated)
- 0.5 tsp ground cinnamon
- 0.5 lemon (use the juice and grated zest)
- 1 tbsp water
- 75 g granulated sugar (for the crumble)
- 150 g butter (for the crumble)
- 225 g all-purpose flour (for the crumble)
- salt (a pinch)
- 75 g pecans (divided; half goes over the fruit and half on top)
- powdered sugar (optional, for serving)
- vanilla ice cream or freshly whipped cream (optional, for serving)
Steps
- 1
Wash the apricots, cut them in half, and remove the pits.
- 2
Place the prepared apricots in a saucepan. Add 50 g sugar, the grated ginger, cinnamon, lemon juice and zest, and the water.
- 3
Bring the apricots to a boil, then cover the pan and simmer over medium-low heat for about 15 minutes. Stir the fruit once during cooking.
- 4
Transfer the stewed apricots and their juices to an ovenproof baking dish. Leave them to cool slightly.
- 5
Meanwhile, make the crumble. Combine the crumble sugar, butter, flour, and a pinch of salt using your fingertips, rubbing and crumbling the mixture until coarse crumbs form.
- 6
Preheat the oven to 180°C. Place the baking dish on a baking sheet to catch any juices that bubble over during baking.
- 7
Scatter half of the pecans over the apricots.
- 8
Cover the fruit with the crumble mixture, then scatter the remaining pecans over the top.
- 9
Bake the crumble in a hot-air/convection oven at 180°C for about 25 minutes.
- 10
Serve immediately while warm. Dust lightly with powdered sugar if desired, and serve with a scoop of vanilla ice cream or freshly whipped cream.
Notes
The creator notes that the fruit can also be prepared without sugar, allowing the flavor of the apricots to stand out. Place the baking dish on a baking sheet to help keep the oven clean if the crumble bubbles over.
