In a separate bowl, combine 8 ounces of cream cheese, 2 eggs, and approximately 1 teaspoon of vanilla extract.

Add 4 cups of powdered sugar to the cream cheese mixture, adding about 2 cups at a time and continuing to mix until fully combined and smooth.

Notes
The cake must be chilled in the refrigerator before cutting to allow the gooey center to set. While optional, you can dust the top with extra powdered sugar or serve with fresh berries. The edge pieces are recommended for those who enjoy a crispier texture.
