Weights are estimates. Together, the ingredients weigh about 995 g before cooking, which is about 500 g per serving.
Steps
Place the pork ribs into a wok or large skillet.
Stir-fry the ribs over high heat until the color changes and they are lightly browned.
Add the ginger, garlic, and star anise to the wok.
Add the light soy sauce, dark soy sauce, oyster sauce, salt, MSG, and ground pepper.
Stir-fry over high heat for 2 minutes to coat the ribs thoroughly in the seasonings.
Pour in the beer until the ribs are mostly submerged.
Cover the lid and simmer for 15 minutes.
Add the sliced green and red chili peppers and the chopped garlic leaves.
Stir-fry over high heat until the sauce has thickened and the vegetables are just tender.
Dish up and serve immediately.
Notes
The 'uninspired beer' mentioned in the transcript is a humorous way of referring to any standard lager used for braising. Garlic leaves can be substituted with green onions or leeks if unavailable.
