Ingredients
- 500 g chicken tenders
- 1 tsp garlic powder
- 1 tsp paprika
- 0.5 tsp black pepper
- 0.5 tsp salt
- 2 egg
- 4 tbsp plain flour
- 2.5 cup cornflakes (2-3 cups)
- 1 tbsp butter
- 2 garlic (cloves)
- 4 tbsp lemon juice
- 1 tsp lemon zest
- 4 tbsp honey
- 1 tsp crushed chilli
- 0.5 tsp salt
- 0.5 tsp crushed black pepper
- 3 tbsp water
- 0.25 tsp cornstarch (for slurry)
- 3 tbsp water (for slurry)
Steps
- 1
In a large bowl, season the chicken tenders with garlic powder, paprika, black pepper, and salt.
- 2
Add the eggs and plain flour to the seasoned chicken and mix well until every piece is thoroughly coated.
- 3
Crush the cornflakes into coarse crumbs and place them in a shallow dish.
- 4
Dredge each chicken tender in the crushed cornflakes, pressing firmly so the crumbs adhere to the surface.
- 5
Cook the chicken tenders in an air fryer or deep fry until they are golden brown and crispy (internal temperature should reach 165°F/74°C).
- 6
To make the sauce, melt the butter in a pan over medium heat. Add the minced garlic and sauté until fragrant.
- 7
Stir in the lemon juice, lemon zest, honey, crushed chilli, salt, crushed black pepper, and 3 tablespoons of water.
- 8
Prepare the cornstarch slurry by mixing 1/4 teaspoon cornstarch with 3 tablespoons water, then pour it into the sauce.
- 9
Simmer the sauce until it thickens slightly into a glossy glaze.
- 10
Toss the crispy chicken tenders in the lemon pepper sauce until evenly coated and serve immediately.
Notes
The cornflakes provide a superior crunch compared to breadcrumbs. For the best results in an air fryer, lightly spray the coated chicken with oil before cooking.
