Steps
Prepare all the ingredients: chop the pepperoni, measure the sauce, and have the shredded mozzarella ready. Place a small bowl of water next to the work area to seal the wrappers.
Place an egg roll wrapper on a clean surface with one corner pointing toward you. Put a small portion of pizza sauce, chopped pepperoni, and mozzarella in the center, without overfilling it to prevent it from opening during frying.
Lightly moisten the edges of the wrapper with water. Fold the closest corner over the filling, then fold the sides toward the center and roll tightly to form a small packet. Press the moistened edge to seal it completely.
Repeat the filling and sealing process with the remaining wrappers, placing the finished bites on a tray or plate without stacking them. Keep the filling inside the edges and check that each packet is securely sealed.
Pour 2-3 cups of neutral oil into a deep skillet or saucepan, leaving enough room to prevent it from overflowing. Heat to approximately 175 °C (350 °F) (350 °F (180 °C)); the oil should be hot and ready for frying, but not smoking.
Fry the bites in small batches so the oil temperature does not drop too much. Cook them for approximately 2-3 minutes, turning them as needed, until the wrappers are golden brown and crisp.
Remove the bites with tongs or a slotted spoon and drain them on a rack or a plate lined with paper towels. Let them rest for a few minutes, as the filling will be very hot.
Serve the mini pizza bites hot, on their own or with additional pizza sauce for dipping.
Notes
The description provides the ingredients but does not include detailed instructions; the assembly and frying steps were completed using standard culinary technique. Do not overfill the wrappers, and seal the edges well to prevent the cheese from escaping during frying. The nutritional information for the oil represents the total amount listed, although some of the oil will remain in the pan and will not be consumed.
