Ingredients

  • 1 lb frozen cubed potatoes (or frozen hash browns)
  • 1 lb ground beef
  • 1 onion (diced)
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 cup ketchup
  • 1 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 cup shredded cheddar cheese
  • green onions (chopped for garnish)

Steps

  1. 1

Cook the frozen cubed potatoes in an air fryer or oven according to the package directions until they are golden brown and crispy.

  2. 2

While the potatoes are cooking, place a large skillet over medium-high heat. Add the ground beef and diced onion to the skillet.

  3. 3

Season the beef and onions with salt, pepper, and garlic powder. Cook, breaking the meat apart with a spatula, until the beef is browned and the onions are translucent. Drain any excess grease from the pan.

  4. 4

Add the ketchup, mustard, Worcestershire sauce, and brown sugar to the skillet with the beef. Stir well to combine and let the mixture simmer for a few minutes until the sauce has thickened slightly.

  5. 5

Once the potatoes are crispy, stir them into the skillet with the sloppy joe meat mixture until evenly coated.

  6. 6

Top the mixture with the shredded cheddar cheese. Cover the skillet with a lid for 1-2 minutes, or until the cheese is completely melted.

  7. 7

Garnish with chopped green onions and serve immediately.

Notes

You can substitute the frozen cubed potatoes with frozen hash browns or even tater tots if preferred. For a leaner version, use ground turkey instead of ground beef.
