Thick-cut bacon baked with a coating of brown sugar, smoked paprika, black pepper, and red pepper flakes. It becomes caramelized, crisp as it cools, and is ideal for serving with eggs, in a BLT, or as part of a brunch.

Weights are estimates. Together, the ingredients weigh about 555 g before cooking, which is about 95 g per serving.

Steps

  1. Preheat the oven to 325 °F (160 °C) (165 °C (325 °F)). Line a baking sheet with aluminum foil and place a wire rack on top.

  2. On a flat surface, mix the brown sugar, black pepper, smoked paprika, and red pepper flakes until evenly distributed.

  3. Generously press the sugar mixture onto both sides of each bacon strip, coating them completely.

  4. Place the coated strips on the rack and bake for 30 to 40 minutes, until deeply browned and caramelized.

  5. Watch the bacon during the last 10 minutes to prevent the sugar from burning.

  6. Let cool for 5 to 10 minutes. The bacon will become crispier as it sets; then serve and enjoy.

Notes

The exact baking time may vary; watch especially during the last 10 minutes because the sugar coating can burn. The bacon crisps as it cools. The author suggests serving it with eggs, in a BLT sandwich, or as part of a brunch.
