Steps

  1. 1

Coronation Chicken: In a bowl, mix the mayonnaise, mango chutney, mild curry powder, yoghurt, and lemon juice until smooth.

  2. 2

Add the diced cooked chicken, chopped coriander, and chopped sultanas. Fold everything together.

  3. 3

Season with salt and plenty of black pepper. Cover and refrigerate until ready to use.

  4. 4

Tuna Mayo and Sweetcorn: Flake the drained tuna in a bowl. Add the mayonnaise, drained sweetcorn, lemon juice, finely diced red onion, and chopped parsley.

  5. 5

Mix gently until combined, then season with salt and plenty of black pepper.

  6. 6

Egg Mayo: Boil the eggs for 9 minutes. Transfer them to iced water and leave them to cool completely.

  7. 7

Peel and roughly chop the eggs, keeping some larger pieces for texture.

  8. 8

Add the mayonnaise, Dijon mustard, and chopped chives to the eggs. Gently fold them together.

  9. 9

Add the rest of the ingredients and mix well together. Season with salt and freshly ground black pepper.

  10. 10

Prawn Cocktail Mayo: Pat the cooked, peeled prawns dry.

  11. 11

Mix the mayonnaise, tomato ketchup, horseradish sauce, Worcester sauce, and lemon juice together.

  12. 12

Add a pinch of cayenne pepper and the chopped chives. Season with salt and black pepper.

  13. 13

Fold the prawns through the sauce. Cover and refrigerate until ready to use.

  14. 14

Cheese Savoury: In a bowl, mix the grated mature cheddar, finely grated carrot, salt, black pepper, and finely diced onion.

  15. 15

Add the mayonnaise, English mustard, lemon juice, and chopped parsley. Mix until everything is evenly coated.

  16. 16

Season with salt and plenty of black pepper.

  17. 17

Chicken Caesar Mayo: Mix the mayonnaise, finely grated Parmesan, Dijon mustard, lemon juice, Worcester sauce, and finely grated garlic together.

  18. 18

Season generously with freshly ground black pepper.

  19. 19

Add the diced cooked chicken and fold it through until evenly coated.

  20. 20

Taste and adjust the seasoning if needed.

Notes

For Egg Mayo, the transcript says “Add the rest of the ingredients” without clearly identifying which items this refers to; the ingredient list includes the stated eggs, mayonnaise, Dijon mustard, chives, salt, and black pepper. The spoken amount “1 tsp of salt and pepper” in Cheese Savoury is ambiguous; the separate amount of 1 tsp is assigned to salt, while the pepper quantity is left unstated. The source does not provide an explicit sandwich assembly method or serving yield for each filling.
