Ingredients
- 7 Apples (6โ8 apples; sweet, crisp, slightly tart varieties such as Pink Lady or Granny Smith; peeled, cored, and sliced 1โ2 mm thick)
- 1 Orange (Zest and juice)
- 2 Eggs
- 70 g Caster sugar
- 30 g Butter (Melted)
- 120 ml Milk
- 1 tsp Vanilla extract or vanilla bean paste (Use either vanilla extract or vanilla bean paste)
- 0.5 tsp Ground cinnamon
- 0.25 tsp Ground nutmeg
- 75 g Plain/all-purpose flour
- Apricot jam (Warm; for glazing)
- Icing sugar (For dusting)
- Parchment paper (For lining the tin, with an overhang for lifting)
- Foil (Optional; loosely cover the cake if it browns too quickly)
Steps
- 1
Peel and core the apples, then slice them very thinly, about 1โ2 mm thick. A knife or mandolin can be used; the source notes that a mandolin works best.
- 2
Add the orange zest and fresh orange juice to the apple slices. Mix well so every slice is coated; the zest adds flavor and the juice helps prevent browning.
- 3
Whisk the eggs and caster sugar together until pale and smooth.
- 4
Add the melted butter, milk, vanilla, cinnamon, and nutmeg to the egg mixture. Whisk again to combine.
- 5
Add the flour and mix just until combined. The batter will be very thin; this is expected.
- 6
Pour the batter over the apples and mix thoroughly so every slice is coated.
- 7
Line a loaf tin with parchment paper, leaving an overhang to make the cake easier to lift out.
- 8
Transfer the coated apples to the lined tin. Lay them neatly or press them in naturally, but pack them tightly. Pour any remaining batter over the top.
- 9
Bake at 170ยฐC for about 1 hour. If the top browns too quickly, loosely cover it with foil.
- 10
Once baked, let the cake cool in the tin for 15 minutes. Brush the top with warm apricot jam to glaze it.
- 11
Let the cake cool completely before lifting it out of the tin.
- 12
Slice the cake, dust with icing sugar, and serve warm or at room temperature.
Notes
The transcript gives no quantity for the apricot jam or icing sugar. Oven temperature and baking time are from the transcript; the post does not specify tin dimensions.
