Ingredients

  • 2 cup Vegetable broth (divided)
  • 1 Onion (chopped)
  • 1 Green bell pepper (chopped)
  • 1.5 lb Mushrooms (quartered)
  • 2 Bay leaves
  • 0.25 tsp Thyme
  • 1 tbsp Soy sauce (optional)
  • 1 cup Red wine
  • 0.25 cup Tomato paste
  • 1 tbsp Parsley flakes
  • Freshly ground pepper (to taste)

    Simmer slowly, uncovered, over low heat for at least 60 minutes longer until the liquid reduces and becomes a thick sauce.
