Ingredients
- 1.5 lb chicken thighs or breasts (boneless, skinless)
- 1 cup corn (frozen or canned)
- 15 oz white beans (such as Cannellini or Great Northern, drained and rinsed)
- 1 bell pepper (diced)
- 1 onion (diced)
- 3 clove garlic (minced)
- 4 oz diced green chilies (canned)
- 1 tbsp homemade chili seasoning (blend of chili powder, cumin, oregano, salt, and pepper)
- 2 cup chicken broth

Add the chicken thighs or breasts to the bottom of the slow cooker.

Add the corn, white beans, diced bell pepper, diced onion, and minced garlic to the slow cooker.

Stir in the diced green chilies and the homemade chili seasoning.

Cover and cook on High for 2 to 3 hours or on Low for 4 to 6 hours.

Once cooked, remove the chicken and shred it with two forks, then return it to the slow cooker and stir to combine before serving.
Notes
