Ingredients
- 400 g Plain or vanilla nonfat Greek yogurt
- 1 Medium egg
- 155 g Bread flour (The amount may vary; add a little more if the dough is still too sticky to knead.)
- 100 g Fit flour or high-protein flour (It absorbs quite a lot of liquid. It can be replaced with additional bread flour, although the nutritional values will change.)
- 30 g Casein protein (It can be replaced with more bread flour until a manageable dough forms.)
- 20 g Unsweetened cocoa powder
- 42.5 g Granulated zero-calorie sweetener
- 8 g Baking powder
- 1 g Salt
- 34 g Raw hazelnuts (For the filling.)
- 95 ml Unsweetened almond milk (For the filling.)
- 60 g Chocolate protein powder (For the filling.)
- 8 g Unsweetened cocoa powder (For the filling.)
- 30 g Granulated zero-calorie sweetener (For the filling.)
- Salt (For the filling.)
- 1 g Xanthan gum (Optional; for the filling.)
Steps
- 1
Preheat the oven to 375 °F (190 °C).
- 2
Mix the Greek yogurt with the egg until well combined.
- 3
In another bowl, mix the bread flour, Fit flour, casein, cocoa powder, sweetener, baking powder, and salt.
- 4
Add the dry ingredients to the yogurt and egg mixture and mix until a dough forms.
- 5
Knead until you have a large, manageable ball of dough. If the dough is too sticky to knead, add a little more bread flour; the additional amount needed may vary depending on the Fit flour and casein used.
- 6
Roll out the dough into a large rectangle approximately ¼ inch thick.
- 7
Place the hazelnuts, almond milk, chocolate protein powder, cocoa, sweetener, salt, and optional xanthan gum in a blender. Blend until smooth and creamy.
- 8
Spread the Nutella-style cream evenly over the rectangle of dough.
- 9
Roll up the dough tightly and cut it into portions.
- 10
Place the rolls in a greased or lined baking dish.
- 11
Bake for 22–30 minutes, depending on the size of the rolls.
- 12
Allow them to cool slightly before serving and enjoying.
Notes
The post indicates approximate values per roll: 127 kcal and 14 g of protein if making 14 medium rolls; 178 kcal and 19 g of protein if making 10 large rolls; or 445 kcal and 48 g of protein if making 4 jumbo rolls. The source text is truncated after “Optional: add fro…”, so no unspecified topping has been added. If you do not have Fit flour or casein, you can use more bread flour, but the texture and nutritional values will change.
